Mindy's Roasted Veggie Naughtiness

mom, you'd be so proud.
we had the sisters over for dinner and i got to actually use my dishes and serve a meal!!
first time!

we decided to make the roasted veggie naughtiness that we stole from aunt mindy:
it looked like this:

yumtown!

we just used the veggies we had- carrots, onions, red/green bell peppers, zucchini, and squash
they go in the oven at 400 degrees for about 30 minutes... then add the cherry tomatoes and they go another 15... or until the cherry tomatoes start to bust out all over

add to freshly cooked bowtie pasta
add salt and pepper to taste
add light balsalmic vinegirette to taste
crumble in some blue cheese and mix it up

so yummy.
so healthy.

honey, i baked!

peg decided like 3 days ago
that i should enter this bake-off.
(and by that i mean, she called to tell me i was already signed up for it...)

the first annual bake-off of put on by my nutrition-by-calli friend.

needless to say,
i didn't think just a fab recipe of rolls would do the trick...

$100 dollar first prize
for some yumtown rolls....
that i made even healthier.
(next time i am going to try the "can't believe it's not butter" option..)

this is me and candice - she won in her category too.

i won't even lie, i am kind of a one-hit wonder.
there is not much that i bake...

but, because I like you:

Meg's Naughty Buttery Crescent Rolls

(award winning)

2 c. Skim milk

1/2 c. butter (1 stick)

1/2 c. sugar

2 t. salt

7 c. flour (3 cups whole wheat)

4 eggs (beaten) or 1 cup egg substitute

2 T. yeast

[Preheat oven to 350 degrees]

1. Dissolve yeast in 1/2 c. warm water and sprinkle with sugar

2. Put first 4 ingredients in large bowl and microwave for 4 minutes

3. Add 3 cups flour to melted ingredients, stir.

4. Add yeast and beaten eggs to mixture, stir

5. Add another 4 cups flour to mixture, stir

6. Let dough rise uncovered in bowl 1 hour

7. After rising, divide dough in half and roll into circles about 1/4 in. thick

8. Brush melted butter onto dough

9. Cut into 16 slices and roll toward the center

10. Place rolls on greased cookie sheet and brush butter on the rolls.

bake @ 350 for 10-12 minutes or until lightly golden. Brush again

with butter while still hot. (You may even want to dip them in melted

butter to serve)

things that make me shimmy...

at the beginning of may, on a friday, i met with one of the peeps that i manage.
this kid has been dating a cute girl for a while....

as part of our one-on-one,
i asked about his thoughts on the topic of wife-having.
turns out he's for it.

so we set a goal to get him married this year,
which meant, engaged quite soon.

the following monday he told me he had a ring and a "blessing-giving" apppointment!
(ok, so we can deduct that the 1:1 was effective...)

turns out he wanted to propose on a beach in cali
near some relatives of mine.
he needed help, and i needed some vitamin D.

thanks, B-rendan,
for such a fun reminder of what it was like to be there
almost exactly 1 year ago...

and for letting me paparazzi a sec

after that adventure, i went straight to girl's camp.

now, i myself, like camping.
this here:

(though, i must say, a fantastic decor job)

NOT CAMPING!!

this is way too posh to be called camping.
lights in cabins and a full kitchen and showers?!!

so much fun to spend time with these cute chicks

and to spend some time with Niko (my camera)
in the great outdoors

miniature break from reality:

check.

highlights

dear blog,
i wanted to repent for being neglectful....

here are some weekly highlights:

· had a meltdown because of my suspicious recent weight gain
and my inability to make it stop last week,
then listened to a talk on saturday morning that reminded me not to care.
and i cried:

"He loves us because He is filled with an infinite measure of holy, pure, and indescribable love. We are important to God not because of our résumé but because we are His children. He loves every one of us, even those who are flawed, rejected, awkward, sorrowful, or broken. God’s love is so great that He loves even the proud, the selfish, the arrogant, and the wicked."
-Dieter F. Uchtdorf

· spent the night playing house and watchin the niece so another one could come.
i like playing mom.

· baby Chantelle Lorraine Moffat was born at 5:11 on 10.5.2009.
7 pounds, 9 ounces of adorable joy.

· yesterday i was listening to my talk radio podcasts on my phone,
cause i have culture,
and heard that obamanation won himself a nobel "piece"
for "capturing the world's attention" and "inspiring hope"
where is michael jackson's piece then?
ironically, i just lost hope in the nobel peace prize...
11 days? you gave the man 11 days to be in office
before nominating the man for changing the world?!
...don't get me started...

· my coworker who never does anything for anyone else,
helped a student at 5:05.... (after his shift!).
he declared, "today will go down in history!"
a breakthrough that makes me smile.

· after not feeling so awesome for the past few days,
and coming home a groggy hot mess everyday,
i got into the car after work yesterday,
rolled the windows down,
blasted some tunes,
and sang along.
smiling the whole way.
a surge of happiness for no reason except that God loves me.

· then we played with some cute friends
long overdue!
ate good food,
laughed a lot,
and went home with smiles on our faces.

today?

today i have 2 years of homework to do...
and i have about 100 blogs left to read...
and groceries to purchase....
and a gym i should visit...
a baby i need to play with...
and a husband to spend ample time with slash go make breakfast for like now...

so far, i'm O for 6.

i love these things...
but i think they are wearin husband out!

Thursday, July 9, 2009

dear friends,

though i didn't really have "bridesmaids" or anything,
these would be them.

and yes, those males would be called "bride's men"
i would have had more if they weren't all married and all over.
i have honestly had more long-term man-friends than girlfriends.

i am not one to make a huge deal about these kinds of things,
i really just had them match and take pictures.

but now that i look back i am so glad that they were a part of it because
these people mean a whole lot to me.

look how cute they are.
especially the one in the suit.

[from left] i will elaborate for you.

E-rob.
whenever i tell cc about these provo boys, i refer to them as the 7 boys.
that was their apt #. and pretty much all who lived in that apt, were like brothers to me.
this one moved to az, so i hooked him up with my fam and he's been coming to sunday dinner,
tutoring my sister, and helping us with all kinds of things.
ony of my college friends, turned into a forever family friend.
love that.

paul.
this one i met around the same time as cc when we were all little mcc-ers.
he's been a friend ever since.
and, like cc, we always got together when we were in town,
and because he flies free, we would meet up in utah at times too!
usually eating at random places, and getting the stories of all of the latest girls in his life.
lets say that when i told him i was dating/marrying chris.....
it was a fun time.

&

mitch.

i met mitch in college, in my program.
this kid is one fantastic theatre teacher. and so much fun!
we spent almost every day last summer just laughing and watching movies,
also swapping stories of dating life and being from mesa.
he was a westwoodite and i a mesa-ite so we drove home for the holidays together
and slept in a gas station.
little did i know that he knew the cliffords so well.
he took kelly to prom even!!
naturally,
he continues to tell me what a fabulous choice i've made.
and how jealous he is to get to be in this family.

he came up to me during the dinner the night before and said,
"you look all jittery-nervous, you ok?" and gave me a hug.
leave it to mitch to catch on.
i heart you kiddo.

ma ladies:

calli.
whenever someone asks who your childhood bestfriend is,
like in a game, or for a password or something,
this is it.
i remember the day we sat [nextdoor] in her mostly lacywhite bedroom
and promised to be at the other's wedding.
she's younger than me by at least a year,
and she's been married for a few years now, so it was comforting to have her.
she was so helpful that day and followed mc [squared] around for pictures,
then made sure i had a swig all night....
gotta love that.

mickelson. or meghan "silent h"
best roommate i ever had.
bar none.
we were insta-friends and had so much fun.
we use to talk about how much we loved cowboys, big trucks, and rascal flatts....
good think i married one!
she came all the way from utah
and when she showed up at the dinner,
my nerves went away for some reason.
love you, girl.
