another hobbie...


found you!


so, being that i am trying {keyword: trying} to be healthy these days. e.g. eating grains and vegetables and fruits and things... i have been searching for a good bran muffin recipe. i have been given many and tried a lot of them, constantly switching things in and out for other things until it is healthy, but also tastes pretty darn good. on the 5th attempt, here is what i came up with. try em out and let me know what you think.

Best Bran Muffins That Exist

¾ cup whole wheat flour
¾ cup oat bran
½ cup brown sugar
1 tsp baking power
1 tsp cinnamon
½ tsp baking soda
2 medium sized ripe bananas
½ cup vanilla yogurt
2 egg whites
1 Tbsp cooking oil
½ tsp vanilla
1 Tbsp of sour cream

Mix together dry ingredients, mix liquids in a separate bowl, and mash bananas in another. Combine the mixtures until moist (yes moist) and bake at 375ish for about 15 minutes. (note: these were made at high altitude. You may want to lower the heat or time accordingly.) Makes 12, so you’ll want to at least double it… or make mini ones.

If you want to be extremely naughty, you would make a pseudo topping using brown sugar, cinnamon and some of the oat bran. Just sprinkle some of each on top before baking and—BAM!—instant kicked up notch.

  2. Thanks for the post, I may never actually cook bran muffins but I must say the clip was very enlightening and creepy.... I never know there were so many types of muffins. I really should go beyond blueberry!

cause they make me smile
